Simply Supper Easy Evening Meals

The Apartments at Charlestown Crossing Blog, North East, MD January means winter is here. Serve up a hearty supper at your apartment with these recipes.

Welcome back to The Apartments at Charlestown Crossing Blog! This month we are bringing you recipes to warm your apartment and your tummy on a cold Maryland winter evening. We have three simple supper recipes for you to try this month, plus some pie for dessert. Enjoy!

Chili and Cornbread

When it comes to chili, there are a wide variety of recipes, and instead of trying to choose just one, we’ll lead you to chili recipes, where you will find beef chili, chicken chili, pork chili, turkey chili, chili without beans, vegetarian chili, white chili, and slow cooker chili recipes. Yum!

Cornbread is the perfect side to go with chili, so here is a recipe we think you will like. For this Golden Sweet Cornbread recipe you will need the following ingredients: flour, cornmeal, sugar, salt, baking powder, egg, milk, and vegetable oil. Simple to make; amazing to eat.

Winter Oven-Beef Stew

Taste of Home brings us this recipe for Winter Oven-Beef Stew.  There’s nothing better than some beef stew to fill you up on a cold winter night. It’s perfect for warming up the kitchen as it cooks, and it makes a mouthwatering meal with its chunks of beef, potatoes, carrots, and onion. Serve with buttered toast for the perfect accompaniment.

Grilled Cheese & Soup

Bacon Avocado Grilled Cheese

The author of this recipe says this sandwich has “the perfect amount of gooey cheesy goodness to crispy carb ratio,” so every calorie will definitely be worth it. Add even more unique texture, flavor, and gooey goodness by adding a scrambled egg or a fried egg to it! This recipe uses avocado, sourdough bread, colby jack cheese, bacon, and butter for a crispy sandwich.

Creamy Roasted Tomato Basil Soup from Cafe Delites

We’ve had a lot of tomato soups but none as fresh as this one! This creamy roasted tomato basil soup uses fresh ingredients (and just a tiny bit of tomato paste) for a soup that is rich, thick, and delicious. This is the perfect soup to serve with a grown-up grilled cheese.

Shepherd Pie

Cutestuff Cooks brings us a down-home recipe for Shepherd Pie. The blogger, apparently an Idaho native, knows quite a bit about potatoes. Add ground beef, green beans, a tomato base, and melted cheddar, and dinner is served. We also found some dessert recipes on this blog that sound so good we had to share them — because what’s dinner without dessert? (See them below.)

Pie for Dessert

Coconut Cream Pie made from scratch with sugar, cornstarch, half-n-half, egg yolks, butter, coconut cream, flaked coconut, and vanilla. Topped with toasted coconut, you can’t go wrong with this for homemade.

Lemon Meringue Pie

The blogger describes this pie as “sweet with a lemony bite” — which sounds perfect for lemon meringue pie. The recipe also provides direction about how to temper eggs, for the perfect filling. Topped with meringue, this dish is worth the time it takes to make.
